Ingredients
- 2–4 salmon fillets (skin-on or skinless)
- 1 ½ cups fresh spinach (or ¾ cup frozen, thawed and squeezed dry)
- 2 cloves garlic, minced
- 2 oz cream cheese, softened
- 2 tbsp grated Parmesan cheese
- ¼ cup shredded mozzarella cheese
- 1 tbsp olive oil (plus more for drizzling)
- 1 tbsp lemon juice
- Salt and pepper, to taste
- Optional: ½ tsp paprika or Italian seasoning

Preheat oven to 375°F (190°C). Lightly grease a baking dish or line with parchment paper.

In a skillet, heat olive oil over medium heat. Sauté garlic and spinach until wilted. Let cool slightly.

In a bowl, combine cooked spinach, cream cheese, Parmesan, and mozzarella until smooth.

Use a sharp knife to cut a pocket in the thickest part of each salmon fillet. Fill evenly with the spinach mixture.
