Description
Cherry Amaretto Tiramisu is a luscious and elegant twist on the classic dessert, featuring layers of espresso-soaked ladyfingers, sweet mascarpone cream, and a tart cherry topping infused with amaretto liqueur.
Ingredients
- For the Cherry Topping:
- 2 cups fresh or frozen cherries, pitted and halved
- 1/4 cup sugar
- 2 tbsp lemon juice
- 2 tbsp amaretto liqueur
- For the Tiramisu:
- 1 pack ladyfingers (savoiardi)
- 1 cup espresso or strong coffee, cooled
- 2 tbsp amaretto liqueur
- 8 oz mascarpone cheese, softened
- 3/4 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp unsweetened cocoa powder (for dusting)
Instructions
- Make the Cherry Topping: In a saucepan over medium heat, combine cherries, sugar, and lemon juice. Cook for 5–7 minutes until cherries soften and release juices. Stir in amaretto and simmer for 2–3 more minutes. Set aside to cool.
- Prepare the Filling: In a bowl, whisk mascarpone, powdered sugar, and vanilla until smooth. In a separate bowl, whip cream to stiff peaks. Gently fold whipped cream into the mascarpone mixture.
- Assemble: Combine coffee and amaretto in a shallow dish. Briefly dip each ladyfinger and layer them in the bottom of a 9×9-inch pan. Spread half the mascarpone mixture over the ladyfingers. Top with half the cherry mixture. Repeat layers.
- Chill: Cover and refrigerate for at least 4 hours or overnight to set.
- Serve: Before serving, dust with cocoa powder. Enjoy chilled.
Notes
- Use pound cake or sponge cake if ladyfingers aren’t available.
- Reduce or omit amaretto for a non-alcoholic version.
- Add orange zest to cherries for a citrusy twist.
- Top with dark chocolate shavings instead of cocoa powder for richness.
- Best made ahead to allow flavors to meld.
