Description

This Date and Orange Almond Loaf is a moist, citrusy quick bread with rich sweetness from dates and a nutty crunch from almonds. It’s a wholesome yet indulgent treat that’s perfect for breakfast, snacking, or dessert.


Ingredients

  • 1 cup chopped pitted dates
  • 1/2 cup fresh orange juice
  • 1 tbsp orange zest
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup brown sugar or coconut sugar
  • 2 large eggs
  • 1/2 cup plain yogurt or sour cream
  • 1/3 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1/2 cup chopped almonds (plus more for topping, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a standard loaf pan with parchment paper.
  2. Soak chopped dates in orange juice for 10 minutes.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  4. In a separate bowl, whisk eggs, yogurt, oil, vanilla extract, and orange zest until smooth.
  5. Combine wet and dry ingredients, then fold in soaked dates (with juice) and chopped almonds.
  6. Pour batter into loaf pan and top with additional almonds if desired.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
