Ingredients
- 1 lb ground beef
- 1 packet taco seasoning mix (or homemade equivalent)
- 1 head iceberg lettuce, chopped
- 1 cup cherry tomatoes, halved
- ½ red onion, diced
- 1 ½ cups shredded cheddar cheese
- 2 cups nacho cheese Doritos, crushed
- 1 cup canned black beans or kidney beans, drained and rinsed (optional)
- ½ cup sliced black olives (optional)
- ¾ cup Catalina or French dressing
- Sour cream or avocado, for topping (optional)
Instructions
-
In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
-
Stir in taco seasoning with a splash of water. Simmer for 3–4 minutes, then remove from heat to cool slightly.
-
While beef cools, prepare the veggies—chop lettuce, slice tomatoes, dice onion, and shred cheese.
-
In a large salad bowl, combine lettuce, tomatoes, onion, cheese, beans, and olives if using.
-
Add cooled taco meat to the bowl and toss to combine.
-
Just before serving, pour in the dressing and mix well.
-
Add crushed Doritos on top or fold them in gently for crunch.
-
Serve immediately with sour cream or avocado on the side if desired.
Notes
- To avoid soggy chips, wait until the last minute to mix in the Doritos and dressing.
- Swap ground beef for turkey, grilled chicken, or extra beans for a vegetarian version.
- Spicy Doritos or sliced jalapeños can turn up the heat if you like things fiery.
- Great for parties—just keep ingredients separate until ready to serve.
