Description

Crock Pot Marry Me Chicken is a creamy, savory slow-cooked dish made with tender chicken breasts, sun-dried tomatoes, garlic, Parmesan, and herbs. It’s easy, comforting, and delicious enough to win hearts.

Ingredients

  • 4 boneless skinless chicken breasts
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes (packed in oil), chopped
  • 1 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tbsp cornstarch + 2 tbsp water (optional, to thicken)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning. Place them in the crock pot.
  2. In a bowl, whisk together chicken broth, heavy cream, minced garlic, and Parmesan cheese.
  3. Stir in chopped sun-dried tomatoes and pour the mixture over the chicken.
  4. Cover and cook on low for 4–5 hours or high for 2–3 hours until chicken is tender and fully cooked.
  5. Optional: In the last 30 minutes, stir in a cornstarch slurry to thicken the sauce if desired.
  6. Before serving, garnish with fresh basil or parsley and red pepper flakes for added flavor.

Notes

  • Substitute chicken thighs for extra flavor and tenderness.
  • Add spinach or mushrooms in the last hour of cooking for more veggies.
  • Use half-and-half for a lighter sauce, or stir in a splash of white wine or lemon juice for brightness.
  • Serve with pasta, rice, or mashed potatoes to soak up the creamy sauce.
  • Store leftovers in the fridge for up to 3 days and reheat gently with a splash of liquid.
