Ingredients
- 1.5 lbs baby potatoes or Yukon gold potatoes, halved
- 1/2 cup grated Parmesan cheese
- 2–3 tbsp olive oil or melted butter
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- Salt and black pepper to taste
- Fresh parsley or thyme, chopped (optional, for garnish)
Instructions
-
Preheat oven to 400°F (200°C). Generously grease a baking dish or sheet with olive oil or melted butter.
-
Sprinkle an even layer of grated Parmesan cheese onto the greased surface.
-
Add garlic powder, onion powder, salt, and black pepper over the cheese.
-
Place halved potatoes cut-side down onto the cheese layer, pressing gently to ensure good contact.
-
Drizzle a little more olive oil over the tops of the potatoes.
-
Bake for 30–40 minutes, until potatoes are fork-tender and the cheese is golden and crispy.
-
Let cool for a few minutes, then use a spatula to carefully lift each potato—crust side up.
-
Garnish with fresh herbs if desired, and serve immediately.
Notes
- For best results, use freshly grated Parmesan for better melting and texture.
- Let the potatoes cool slightly before lifting to keep the cheese crust intact.
- Try variations with sweet potatoes, shredded mozzarella, smoked paprika, or Italian seasoning.
- Store leftovers in the fridge for up to 3 days and reheat in an oven or air fryer to retain crispiness.
