Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup cooked, shredded chicken (or rotisserie)
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- 1–2 cups crushed Doritos (nacho cheese or flavor of choice)
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- Cooking spray or olive oil for baking

Preheat oven to 375°F (190°C) and line a baking sheet with parchment or foil.

Carefully cut a pocket into each chicken breast without slicing all the way through.

In a bowl, combine shredded chicken, cream cheese, shredded cheese, garlic powder, onion powder, salt, and pepper until smooth.

Stuff each chicken breast with the cream cheese filling and gently press edges to seal.

Set up three bowls: one with flour, one with beaten eggs, and one with crushed Doritos.

Dredge each stuffed chicken breast in flour, then dip in egg, and coat completely in crushed Doritos.

Place on baking sheet and lightly spray with cooking spray.
