Ingredients
- 2 boneless, skinless chicken breasts or thighs
- 1/2 cup flour
- 2 eggs, beaten
- 1 cup breadcrumbs (panko for extra crunch)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 2–3 tbsp olive oil or neutral oil (for pan-frying or brushing for baking)
- 1/4 cup Caesar dressing (store-bought or homemade)
- 1 cup romaine lettuce, shredded
- 2 tbsp Parmesan cheese, shaved or grated
- 2–4 sandwich buns or brioche rolls, toasted
- Optional: splash of lemon juice, anchovy paste, or crushed croutons for topping
Instructions
- Pound chicken to even thickness and season with salt, pepper, garlic powder, and paprika.
- Set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge chicken in flour, dip in egg, then coat in breadcrumbs.
- Pan-fry in hot oil for 4–5 minutes per side or bake at 425°F (220°C) for 20–25 minutes, flipping halfway.
- While chicken cooks, toss romaine with Caesar dressing, Parmesan, and a splash of lemon juice if desired.
- Toast sandwich buns until golden.
- Assemble sandwiches with crispy chicken, Caesar-dressed lettuce, extra Parmesan, and a drizzle of dressing on buns.
- Serve warm, optionally with more lettuce or baked fries.
