Description
Crispy Beef and Cheese Chimichangas are golden-fried tortillas filled with seasoned ground beef and melted cheese. Crunchy on the outside and savory on the inside, they’re an irresistible Tex-Mex comfort food perfect for weeknights or casual gatherings.
Ingredients
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning or 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1/2 tsp salt
- 2 tbsp tomato paste or 1/4 cup salsa
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 6 large flour tortillas
- Vegetable or canola oil, for frying
- Optional toppings: sour cream, guacamole, salsa, chopped cilantro
Instructions
- In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks.
- Add chopped onion and garlic, sautéing until soft and fragrant.
- Stir in taco seasoning and tomato paste or salsa. Cook for another 2–3 minutes until well combined.
- Remove from heat and let cool slightly. Mix in shredded cheese.
- Spoon the beef and cheese mixture onto the center of each tortilla. Fold in sides and roll tightly like a burrito.
- Heat oil in a deep skillet over medium-high heat. Fry chimichangas seam-side down until golden and crispy, 2–3 minutes per side.
- Drain on paper towels and serve hot with desired toppings.

- Try using shredded chicken or pulled pork for variation.
- Add jalapeños or hot sauce for extra heat.
- Mix in beans for a heartier filling.
- Bake instead of fry for a lighter option.
