Description

Creamy Tuscan Chicken is a savory skillet dish featuring seared chicken breasts in a rich garlic Parmesan cream sauce with sun-dried tomatoes and spinach. It’s a comforting, elegant meal perfect for any night of the week.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes (in oil), drained and sliced
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Season chicken with salt, pepper, and garlic powder on both sides.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté minced garlic for 30 seconds.
  4. Add chicken broth and scrape up browned bits. Stir in heavy cream and Parmesan.
  5. Add sun-dried tomatoes, Italian seasoning, and red pepper flakes. Simmer for 3–4 minutes until slightly thickened.
  6. Stir in spinach and cook until wilted.
  7. Return chicken to the pan and simmer for 2–3 more minutes, spooning sauce over the top.
  8. Serve hot with additional Parmesan or parsley if desired.

  • Use boneless thighs for extra juiciness.
  • Add mushrooms or cherry tomatoes for variety.
  • Use half-and-half to lighten up the dish.
  • Substitute with coconut cream and nutritional yeast for a dairy-free version.
