Creamy Mini Cheesecake Bites are rich, smooth single-serve cheesecakes with a buttery graham cracker crust — easy to make, fun to top, and perfect for satisfying a sweet craving without baking a whole cake.
Ingredients
- For the crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted unsalted butter
- 2 tbsp granulated sugar
- For the filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- Optional toppings:
- Fresh berries
- Fruit preserves
- Chocolate ganache
- Caramel sauce
- Whipped cream
Instructions
- Preheat oven to 325°F and line a 12-cup muffin pan with paper liners.
- Mix graham cracker crumbs, melted butter, and sugar. Press 1 tbsp of mixture into each liner and bake for 5 minutes.
- In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Spoon filling over each crust, almost to the top.
- Bake for 16–18 minutes, until centers are just set and slightly jiggly.
- Cool completely, then chill in the fridge for at least 2 hours before adding toppings and serving.
Notes
- Flavor with lemon zest or swirl in jam before baking.
- Use chocolate or gingersnap cookies for the crust for a twist.
- Top with ganache, berries, or caramel for variety.
- Freeze individually and thaw overnight to enjoy later.
