Description

Creamy Garlic Chicken with Mashed Potatoes is a cozy, indulgent dinner featuring golden-seared chicken in a rich garlic cream sauce served over buttery mashed potatoes. It’s hearty, comforting, and full of flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 cup all-purpose flour (for dredging)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 2 lbs russet or Yukon gold potatoes, peeled and chopped
  • 4 tablespoons butter (for potatoes)
  • 1/2 cup milk or heavy cream (for potatoes)
  • Salt and pepper, to taste (for potatoes)

Instructions

  1. Boil potatoes in salted water until tender, 15–20 minutes. Drain and mash with butter, milk, salt, and pepper until smooth. Set aside.
  2. Season chicken with salt, pepper, and garlic powder. Lightly dredge each piece in flour.
  3. Heat olive oil and butter in a large skillet. Sear chicken on both sides until golden and cooked through. Remove and set aside.
  4. Add more butter to the skillet if needed. Sauté garlic until fragrant.
  5. Pour in chicken broth, scraping up brown bits. Reduce heat and stir in cream, Parmesan, and Italian seasoning.
  6. Simmer until sauce thickens slightly. Return chicken to the skillet and spoon sauce over it to finish cooking.
  7. Serve chicken over mashed potatoes, drizzle with garlic cream sauce, and garnish with parsley.

Notes

  • Add mushrooms or spinach to the sauce for extra flavor.
  • Use chicken thighs for a juicier variation.
  • Lighten the sauce with half-and-half instead of cream.
  • Stir shredded mozzarella into the mashed potatoes for added richness.
