Ingredients
- 2 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg (optional)
- 1/4 tsp salt
- 2 cups milk (dairy or non-dairy)
- 2 eggs
- 1/3 cup maple syrup or honey
- 1 tsp vanilla extract
- 2 apples, peeled and chopped
- 2 tbsp coconut oil or melted butter
- 1/4 cup chopped nuts (walnuts or pecans, optional)
Instructions
- Preheat oven to 375°F and lightly grease an 8×8-inch baking dish.
- In a large bowl, mix oats, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together milk, eggs, maple syrup, vanilla, and melted coconut oil or butter.
- Add chopped apples to the dry oat mixture.
- Pour wet ingredients into the dry mixture and stir to combine.
- Transfer to the greased baking dish and smooth the top.
- Sprinkle nuts on top if using.
- Bake for 35–40 minutes, or until the center is set and the top is golden.
- Let cool slightly before slicing and serving.
