Description

This Cozy Oatmeal Apple Breakfast Bake is a warm, comforting morning treat made with wholesome oats, sweet apples, maple syrup, and cinnamon. Perfect for meal prep or a slow weekend breakfast, this baked oatmeal is naturally sweetened, easy to make, and keeps you full all morning.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1/4 tsp salt
  • 2 cups milk (dairy or non-dairy)
  • 2 eggs
  • 1/3 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 2 apples, peeled and chopped
  • 2 tbsp coconut oil or melted butter
  • 1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions

  1. Preheat oven to 375°F and lightly grease an 8×8-inch baking dish.
  2. In a large bowl, mix oats, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together milk, eggs, maple syrup, vanilla, and melted coconut oil or butter.
  4. Add chopped apples to the dry oat mixture.
  5. Pour wet ingredients into the dry mixture and stir to combine.
  6. Transfer to the greased baking dish and smooth the top.
  7. Sprinkle nuts on top if using.
  8. Bake for 35–40 minutes, or until the center is set and the top is golden.
  9. Let cool slightly before slicing and serving.

Notes

  • Use pears instead of apples for a twist.
  • Add raisins, cranberries, or chopped dates for natural sweetness.
  • Make it dairy-free with almond, oat, or soy milk.
  • Substitute flax eggs for a vegan version.
  • Stir in Greek yogurt or protein powder for added protein.
