Description

Cool and Crunchy Cucumber Snack Bites are a refreshing, low-carb, no-cook appetizer that comes together in just minutes. With crisp cucumber rounds, a creamy herb spread, and optional toppings like tomatoes or olives, these healthy snack bites are perfect for hot days, lunchboxes, or party trays. Ideal for keto and vegetarian diets, they’re endlessly customizable and irresistibly crunchy.


Ingredients

  • Fresh cucumbers
  • Cream cheese or a plant-based spread
  • Fresh dill or chives, chopped
  • Garlic powder (optional)
  • Salt and pepper to taste
  • Cherry tomatoes or sliced olives (optional)
  • Everything bagel seasoning (optional)

Instructions

  1. Wash and slice cucumbers into thick rounds, about ½ inch each.

  2. Use a small spoon or melon baller to scoop a shallow well into the center of each round (not all the way through).

  3. In a bowl, mix cream cheese with garlic powder, salt, pepper, and chopped herbs until smooth.
