Description

Ingredients

  • 1 pre-baked pie crust (homemade or store-bought)
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 4 large egg yolks
  • 2 3/4 cups whole milk
  • 6 oz semi-sweet or dark chocolate, chopped
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract (for filling)
  • 4 large egg whites, room temperature
  • 1/4 tsp cream of tartar
  • 1/2 cup granulated sugar (for meringue)
  • 1/2 tsp vanilla extract (for meringue)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, whisk together 3/4 cup sugar, cornstarch, and salt.
  3. Whisk in egg yolks and milk until smooth.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles.
  5. Remove from heat and stir in chocolate, butter, and 1 tsp vanilla until smooth.
  6. Pour the filling into the baked pie crust and let cool slightly.
  7. In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
  8. Gradually add 1/2 cup sugar and beat until stiff, glossy peaks form.
  9. Fold in 1/2 tsp vanilla extract.
  10. Spoon meringue over the chocolate filling, spreading to seal edges.
  11. Bake for 10–12 minutes, or until the meringue is golden brown.
  12. Let cool at room temperature, then chill for at least 4 hours before serving.
