Description

These Chocolate Covered Strawberry Brownies are a dreamy fusion of fudgy brownies, fresh strawberries, and silky ganache. With layers that mimic the flavor of chocolate-dipped strawberries, this decadent dessert is perfect for Valentine’s Day, special occasions, or just when you want something extra indulgent.

Ingredients

  • 1 box brownie mix (or your favorite homemade brownie recipe)
  • 1 lb fresh strawberries, hulled and sliced
  • 1 cup semi-sweet or dark chocolate chips
  • ½ cup heavy cream
  • 1 tbsp butter (optional, for silkier ganache)
  • Optional: 1 tsp vanilla extract (for brownie base)

Instructions

  1. Prepare and bake brownies in a parchment-lined 9×9-inch pan according to package directions or your homemade recipe.

  2. Let the brownies cool completely.

  3. Arrange sliced strawberries evenly over the top of the brownies, pressing gently to help them adhere.

  4. Heat heavy cream in a small saucepan or microwave-safe bowl until just simmering.

  5. Pour the hot cream over the chocolate chips in a bowl. Let sit for 1 minute, then stir until smooth. Add butter if using.

  6. Pour ganache over the strawberries and spread evenly with a spatula.

  7. Chill brownies in the fridge for at least 1 hour to set.

  8. Once firm, slice into 9–12 squares. Serve chilled or at room temperature.

Notes

  • Use white chocolate for a twist, or swirl strawberry jam under the fruit for extra sweetness.

  • Add espresso powder or chocolate chunks to the brownie batter for more depth.

  • Raspberries or blackberries can be used in place of strawberries.

  • For clean cuts, use a hot knife and wipe between slices.
