Description

Chilled Cucumber Salmon Stackers are elegant, no-cook appetizers made with crisp cucumber rounds, creamy cheese, and flaked salmon — a fresh, flavorful bite-sized treat perfect for warm-weather entertaining or light snacking.

Ingredients

  • 1 English cucumber, sliced into ¼-inch rounds
  • 6 oz cream cheese or whipped herbed cheese
  • 1 cup flaked cooked salmon (not smoked)
  • 1 tsp lemon zest
  • 1 tbsp fresh dill or chives, chopped
  • Salt and black pepper, to taste
  • Optional: capers, for garnish

Instructions

  1. Slice cucumber into ¼-inch rounds and pat dry with a paper towel.
  2. In a small bowl, mix cream cheese with lemon zest, herbs, salt, and pepper until smooth.
  3. Spread or pipe a small amount of cheese mixture onto each cucumber slice.
  4. Top each with a piece of flaked salmon.
  5. Garnish with additional herbs or capers if desired.
  6. Chill for 10–15 minutes before serving or serve immediately.

Notes

  • Use garlic and herb cheese spread for extra flavor.
  • Top with radish or avocado slices for variation.
  • Add a pinch of horseradish or hot sauce for heat.
  • Best served fresh; store up to 24 hours in the fridge.
