Ingredients
- 4 boneless, skinless chicken breasts or thighs
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ½ cup chicken broth
- 1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs)
- ¼ cup heavy cream (optional, for extra richness)
- Fresh parsley or thyme, for garnish
Instructions
- Season chicken on both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side, or until golden and cooked through. Transfer to a plate and cover to keep warm.
- Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the pan.
- Stir in the Boursin cheese and let it melt completely, forming a smooth sauce. Stir in cream, if using, for extra richness.
- Return chicken to the skillet and spoon the sauce over top. Simmer gently for 2–3 minutes until heated through.
- Garnish with fresh parsley or thyme and serve immediately.
Notes
- Add sautéed mushrooms or spinach for more texture and flavor.
- Swap chicken with pork medallions or salmon for variety.
- Stir in a splash of white wine for extra depth in the sauce.
- Serve over mashed potatoes, rice, or pasta to soak up the sauce.
- Store leftovers in the fridge for up to 3 days and reheat gently with a splash of broth.
