This Cheesy Baked Burrito Casserole is a hearty, layered dish packed with seasoned ground beef, creamy sauce, tortillas, and melted cheese—an easy-to-make comfort food favorite perfect for busy nights, meal prep, or feeding a crowd.
Ingredients
- Main casserole:
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 (16 oz) can refried beans
- ½ cup sour cream
- 1 (10 oz) can cream of mushroom soup or 4 oz cream cheese
- 6–8 flour tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- Optional toppings:
- Chopped tomatoes
- Sliced black olives
- Diced jalapeños
- Sliced green onions
- Fresh cilantro

Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

In a skillet, cook ground beef with onion and garlic until browned. Drain fat.

Stir in taco seasoning and a splash of water. Simmer briefly, then stir in refried beans.

In a separate bowl, mix sour cream with cream of mushroom soup or cream cheese until smooth.

Layer tortillas in the bottom of the baking dish, followed by a portion of the beef and bean mixture, some creamy sauce, and a sprinkle of cheese.

Repeat the layers until all ingredients are used, finishing with a generous cheese layer on top.

Cover with foil and bake for 25 minutes. Uncover and bake 10 more minutes until bubbly.
