Description

This Cheesy Baked Burrito Casserole is a hearty, layered dish packed with seasoned ground beef, creamy sauce, tortillas, and melted cheese—an easy-to-make comfort food favorite perfect for busy nights, meal prep, or feeding a crowd.


Ingredients

  • Main casserole:
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (16 oz) can refried beans
  • ½ cup sour cream
  • 1 (10 oz) can cream of mushroom soup or 4 oz cream cheese
  • 68 flour tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • Optional toppings:
  • Chopped tomatoes
  • Sliced black olives
  • Diced jalapeños
  • Sliced green onions
  • Fresh cilantro

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  2. In a skillet, cook ground beef with onion and garlic until browned. Drain fat.

  3. Stir in taco seasoning and a splash of water. Simmer briefly, then stir in refried beans.

  4. In a separate bowl, mix sour cream with cream of mushroom soup or cream cheese until smooth.

  5. Layer tortillas in the bottom of the baking dish, followed by a portion of the beef and bean mixture, some creamy sauce, and a sprinkle of cheese.

  6. Repeat the layers until all ingredients are used, finishing with a generous cheese layer on top.

  7. Cover with foil and bake for 25 minutes. Uncover and bake 10 more minutes until bubbly.

  8. Let rest 5–10 minutes before slicing and serving.
