Ingredients
- 2 cups cooked shredded chicken
- 2 cans white beans (Great Northern or cannellini), drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (4 oz) green chilies
- 3 cups chicken broth
- 4 oz cream cheese
- 1/2 cup heavy cream or half-and-half
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil or butter
- Salt and pepper to taste
- Chopped fresh cilantro or green onions for garnish (optional)
Instructions
- Heat olive oil or butter in a large pot over medium heat. Sauté chopped onion and garlic until soft and fragrant.
- Stir in Cajun seasoning and cook for 1 minute to release flavors.
- Add shredded chicken, white beans, and green chilies. Mix well.
- Pour in chicken broth, bring to a simmer, and cook for 15 minutes.
- Reduce heat and stir in cream cheese and heavy cream until melted and smooth.
- Simmer for an additional 5–10 minutes, then adjust seasoning to taste.
- Garnish with cilantro or green onions if desired before serving.
