Description

Cajun Butter Shrimp & Sausage Sheet Pan is a bold, flavorful one-pan meal featuring juicy shrimp, smoky sausage, and roasted vegetables tossed in a buttery Cajun seasoning blend. Quick to prepare and easy to clean up, it’s perfect for weeknight dinners.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 2 ears corn on the cob, cut into rounds or 1 1/2 cups frozen mini cobs
  • 3 tbsp melted butter
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning (divided)
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or green onions

Instructions

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper or foil.
  2. In a large bowl, toss sausage, bell peppers, onion, and corn with olive oil, 1 tbsp Cajun seasoning, salt, and pepper. Spread evenly on the sheet pan.
  3. Roast for 15 minutes.
  4. Meanwhile, mix shrimp with melted butter, garlic, lemon juice, and remaining Cajun seasoning.
  5. Remove sheet pan from oven, stir vegetables, and add shrimp mixture on top.
  6. Return to oven and roast for 8–10 minutes, or until shrimp are pink and cooked through.
  7. Finish with a squeeze of lemon and garnish with parsley or green onions. Serve warm.

Notes

  • Add baby potatoes or zucchini for extra substance.
  • Use andouille sausage for spicier flavor.
  • Substitute shrimp with chicken for a milder version.
  • For low-carb, skip corn and add broccoli or cauliflower florets.
