Description

Brown Sugar Pop Tart Cookies are soft, chewy treats inspired by the classic toaster pastry. Filled with a brown sugar-cinnamon center and topped with a vanilla glaze, these cookies are a nostalgic, sweet twist on a bakery favorite.


Ingredients

  • For the cookie dough:
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • For the filling:
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tbsp all-purpose flour
  • 2 tbsp unsalted butter, melted
  • For the glaze:
  • 1 cup powdered sugar
  • 23 tbsp milk or cream
  • 1/2 tsp vanilla extract
  • Pinch of ground cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs and vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually add dry ingredients to the wet mixture until a soft dough forms.
  6. Mix all filling ingredients in a small bowl until combined and crumbly.
  7. Scoop dough into balls and flatten slightly. Add a small spoonful of filling to the center and top with another piece of dough, sealing the edges.
  8. Place on baking sheet and bake for 10–12 minutes until edges are golden.
  9. Cool cookies on a wire rack. Whisk glaze ingredients together and drizzle over cooled cookies. Let glaze set before serving.
