Description

The Bourbon-Maple Brisket Grilled Cheese Wafflewich is a bold twist on a classic sandwich, combining tender brisket, melted cheese, crispy waffles, and a rich bourbon-maple glaze for a savory-sweet indulgence that’s comfort food with flair.

Ingredients

  • 11.5 cups cooked brisket, sliced or shredded
  • 1 cup cheddar cheese (or preferred cheese), sliced or shredded
  • 4 waffles (homemade or store-bought)
  • 2 tbsp butter, for grilling
  • 1/4 cup maple syrup
  • 2 tbsp bourbon
  • 1 tsp Dijon mustard
  • 1 tbsp brown sugar
  • Pinch of salt

Instructions

  1. In a small saucepan, combine maple syrup, bourbon, Dijon mustard, brown sugar, and a pinch of salt. Simmer over medium heat for 5–7 minutes until slightly thickened. Let cool.
  2. Warm the brisket gently in a pan or microwave.
  3. Toast or warm the waffles if not already crisp.
  4. Place one waffle on a surface and layer with cheese, brisket, and a drizzle of bourbon-maple glaze. Add another layer of cheese and top with a second waffle.
  5. Butter the outsides of the sandwich.
  6. Heat a skillet or griddle over medium heat and grill the wafflewich for 2–3 minutes per side, pressing gently until the cheese is melted and waffles are golden.
  7. Let rest for 1 minute, then slice and serve hot.

Notes

  • Try different cheeses like smoked gouda, pepper jack, or mozzarella.
  • Add pickled onions or jalapeños for extra kick.
  • A fried egg turns it into a breakfast-style sandwich.
  • Pulled pork or rotisserie chicken are great brisket substitutes.
  • Best reheated in a skillet or air fryer to maintain crispness.
