Description

BBQ Pineapple Chicken Kabobs are a grilled summertime favorite made with juicy chicken, sweet pineapple, crisp veggies, and a sticky barbecue glaze. These kabobs are easy to prep, full of smoky-sweet flavor, and perfect for cookouts, weeknight dinners, or any time you want to fire up the grill with a fresh, colorful dish.


Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into chunks
  • 2 cups fresh pineapple chunks (or canned, drained)
  • 2 bell peppers (any color), cut into pieces
  • 1 red onion, cut into wedges
  • ½ cup barbecue sauce (plus more for basting)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes.

  2. In a bowl, toss chicken with olive oil, garlic powder, paprika, salt, and pepper. Let marinate for at least 30 minutes.

  3. Preheat grill to medium-high heat.

  4. Thread chicken, pineapple, bell peppers, and onion onto skewers, alternating for color.

  5. Brush kabobs lightly with barbecue sauce.

  6. Grill for 10–12 minutes, turning every few minutes and basting with more sauce, until chicken is cooked through and lightly charred.

  7. Remove from grill and let rest a few minutes before serving.
