Ingredients
- 2 ripe bananas, mashed
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.
- Add mashed bananas, egg, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Fold in chopped walnuts or chocolate chips, if using.
- Drop spoonfuls of dough onto the baking sheet and slightly flatten each one.
- Bake for 10–12 minutes, until edges are set and tops are lightly golden.
- Let cool on the pan for 2 minutes, then transfer to a wire rack to cool completely.
Notes
- Use very ripe bananas for the best flavor and sweetness.
- Add oats or substitute some flour with whole wheat for a heartier cookie.
- To keep cookies soft, store with a slice of bread in the container.
- Freeze leftovers in a zip-top bag for up to 2 months.
