Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted butter
  • 24 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ½ cup brown sugar (divided)
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 23 apples (Granny Smith, Honeycrisp, or Fuji), peeled and diced
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup all-purpose flour (divided)
  • ½ cup rolled oats
  • ¼ cup cold butter, cubed
  • Caramel sauce, for drizzling (store-bought or homemade)

Instructions

  1. Preheat oven to 325°F (160°C). Line a springform pan with parchment paper.

  2. Mix graham cracker crumbs and melted butter; press into the bottom of the pan for the crust.

  3. In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla and sour cream until fully blended.

  4. Pour cheesecake batter over crust and smooth the top.

  5. Toss diced apples with ¼ cup brown sugar, ¼ cup flour, cinnamon, and nutmeg. Spoon evenly over cheesecake layer.

  6. In a separate bowl, combine oats, remaining flour, brown sugar, and cold butter. Cut together until crumbly. Sprinkle over apples.

  7. Bake 50–60 minutes or until cheesecake is mostly set and topping is golden.

  8. Cool completely, then chill in the refrigerator for at least 4 hours.

  9. Before serving, drizzle caramel sauce generously over the top. Slice and serve chilled.
